Feta Muffins – Recipe from Koukakis Farm

  • 250 grams all-purpose flour
  • 2 tsp baking powder
  • 1 roasted red Florina pepper
  • 1 tsp salt
  • 2 tbsp finely chopped parsley
  • 160 ml light cream
  • 125 grams Koukakis Farm butter
  • 1 egg
  • 100 grams Koukakis Farm feta cheese
  • Freshly ground pepper
  1. Preheat the oven to 170 degrees Celsius.
  2. Finely chop the pepper.
  3. Sift the flour and baking powder into a bowl.
  4. Add the pepper, salt, and parsley.
  5. In another bowl, combine the light cream, butter, and egg, and beat until blended.
  6. Make a well in the bowl with the dry ingredients and add the wet ingredients.
  7. Mix with a spoon.
  8. Fill the muffin cups halfway, add feta, and cover with the remaining batter.
  9. Bake for 12 to 15 minutes.
