Home made ice cream with yoghurt – Recipe from Koukakis Farm

  • 1kg Koukakis Farm Greek yoghurt 2%
  • 500g whipping cream
  • 300g powdered sugar
  • 300g fruit pieces
  1. Put the sugar and water in a saucepan. Stir and bring to a boil.
  2. Boil the milk in a saucepan and then let it cool again.
  3. Place the yogurt in a bowl, gradually add the milk, and whisk to combine.
  4. Then add the now cold syrup. Stir well.
  5. Place the bowl with the mixture in the freezer until it starts to thicken and firm up.
  6. Then beat it again with a hand mixer until fluffy and the ice crystals formed during freezing dissolve.
  7. Refreeze the mixture and repeat the process 3-4 more times to make it nicely fluffy.
  8. Optionally, add pieces of fruit, honey, and nuts, and mix them well into the mixture.
