Potato Soup – Recipe from Koukakis Farm

  • 2 medium slices bacon
  • 2 tbsp Koukakis Farm butter
  • 6 medium potatoes (cut into small pieces)
  • 2 leeks (finely chopped)
  • 1 dry onion (finely chopped)
  • Fresh thyme
  • 6 cups vegetable broth
  • 100 ml light cream
  • Croutons for serving
  • Chives
  • Koukakis Farm yogurt (optional)
  1. Chop the bacon and cook it over high heat until browned.
  2. Drain and remove it.
  3. Add butter to the pot and sauté the onion, thyme, and leek for 2-3 minutes.
  4. Add the potatoes and broth.
  5. Cover and bring the soup to a boil over high heat.
  6. Once boiling, reduce to medium heat and simmer until the potatoes are soft.
  7. Add salt and pepper, and remove the thyme.
  8. Puree the potato soup.
  9. Add the cream and cook for 3 to 4 minutes.
  10. Serve the potato soup garnished with bacon, croutons, and chives.
