Strawberry Cake – Recipe from Koukakis Farm

  • 125 g soft butter

  • 150 g sugar

  • 2 large eggs

  • Zest of 1/2 lemon

  • 200 g soft flour

  • 1 ½ tsp baking powder

  • A pinch of salt

  • 120 g Koukakis Farm yogurt

  • 150 g small strawberries, halved

For the syrup:

  • 150 g sugar
  • 150 g water
  • 2 tbsp lemon juice
  • Zest of 1/2 lemon
  1. Preheat the oven to 170°C.

  2. Butter and flour the cake pan.

  3. Sift the flour, baking powder, and salt.

  4. Mix the butter with the sugar.

  5. Add the eggs.

  6. Add the zest and yogurt and mix the batter.

  7. Add the strawberries and mix, then pour into the prepared pan.

  8. Bake for 45-50 minutes.

  9. Let it cool for 15 minutes.

For the syrup:

  1. Boil all the ingredients.
  2. Pour it slowly over the cake.
