  • 1 package of sugar-free digestive biscuits
  • 100 g melted butter
  • 1 tablespoon of honey
  • 750 g mascarpone
  • Zest and juice of 2 Lime
  • 100 g stevia
  • 100 g of lemon juice
  • 300 g fresh fruit
  • Stevia
  1. Crush the biscuits.
  2. Add the melted butter and honey.
  3. Mix and spread them in the pan.
  4. Freeze in the refrigerator.
  5. Put the mascarpone cheese in a bowl.
  6. Add the stevia, lime zest and lime juice.
  7. Mix.
  8. Spread the cream on the base of the cookie.
  9. Spread the top.
  10. Freeze for 2 hours.
  11. Mash half of the fruit in a blender with the stevia.
  12. Garnish the cheesecake with the fresh fruit and mint leaves.
