Velouté Carrot Soup – Recipe from Koukakis Farm

  • 2 tbsp Koukakis Farm butter
  • 700 g carrots
  • 1 sweet potato
  • 1 small onion
  • 1 leek
  • 1 celery stalk
  • 1 liter vegetable broth
  • 1 tbsp fresh ginger (grated)
  • A pinch of cumin
  • A pinch of nutmeg
  • 1 orange peel
  • Salt & pepper
  1. Chop the vegetables finely.
  2. Heat the butter and sauté the chopped leek, onion, and celery.
  3. Chop the sweet potato and carrots finely.
  4. Put everything into the pot.
  5. Sauté for 3 minutes and then add the broth.
  6. Let the carrot soup simmer for 25 minutes.
  7. Remove the soup from the heat once the vegetables are soft and puree them with an immersion blender.
  8. Return the carrot soup to medium heat, add the spices, and let it boil.
  9. Serve the carrot soup with croutons and a bit of Koukakis Farm yogurt.
