Yoghurt mousse with fruit – Recipe of Koukakis Farm

  • 250 g drained yoghurt from Kookaki Farm
  • 2 tablespoons honey
  • 100 g cold cream 35%
  • 100 g wholemeal biscuits
  • Fresh red fruit
  • 1/2 cup grated Aegina pistachios
  • 150 g unsweetened jam
  1. Place the yogurt in a bowl and add the honey.
  2. Mix the ingredients and place in the refrigerator.
  3. Pour the cold cream into a clean bowl.
  4. Using a whisk or hand mixer, whip the cream.
  5. Add the whipped cream to the bowl with the yogurt.
  6. Serve in individual glasses.
  7. Top with broken cookies, add some jam, continue with some mousse and garnish with fresh fruit.
  8. Optionally, add an Aegina peanut.
  9. Place them in the refrigerator for two hours to chill.
