Chocolate Lava Soufflé – Koukakis Farm Recipe

  • 100 g. couverture chocolate (ideally cut into pieces)
  • 20 g. Koukaki Farm butter
  • 30 g. sugar
  • 1 pinch of salt
  • 2 large eggs
  1. Butter the soufflé dishes and add a little sugar.
  2. Melt the chocolate with the butter (bain marie)
  3. Separate the eggs and beat the egg whites with the salt.
  4. Gradually add the sugar until the meringue is formed.
  5. With a spoon, dissolve the yolks in the melted chocolate and mix.
  6. Add 1/3 of the meringue to the melted chocolate.
  7. Mix until the mixture is homogeneous.
  8. Add the remaining meringue.
  9. Put the mixture in the dishes and bake at 200°C in air for about 7 minutes.
